Baked Pork Chimichanga's!


This is my spin off of another pork chimichanga recipe that I had seen on a cooking website.
A little time consuming, but was very delicious!!

1 pork loin or roast, trimmed off fat

Seasoning mix

8 garlic cloves
2 t. Mexican oregano (dried)
2 t. peppercorns
1 t. cumin
2 t. salt
1 t. red pepper
2 t. chili powder


Place seasonings in mortar, crush everything together.
Rub seasoning mixture over all the pork loin.
Place in crock pot with 1 cup water and 1/4 of an onion.
Cook on low for 8 hours or until pork falls apart.
Shred pork with 2 forks.
Let cool.

Additional ingredients
6 tortillas
2 cups diced tomatoes

Sauce of your choice (we like cheese sauce on ours, but can use red or green sauce)

Take cooled pork mixture, (divide between the tortillas) place down the middle in tortilla along with diced tomatoes; roll up tortillas and place on greased baking pan. Lightly spritz top of tortillas with cooking spray also.
Bake 375 for 20 minutes (if you like yours really crisp, I would put under the broiler for a few minutes)
Top with your favorite sauce! :)
