Kinda put my own recipe for Shepherds pie together myself...taking this and that from other recipe!
LOVED the results!!
So delicious and it makes a small amount, so perfect for the 2 of us to eat! If you want to make a bigger pie, you can always double the recipe.
2 cups cooked, shredded lamb (roast/leg)
1 T. chopped onion
2 cups lamb gravy
salt & pepper
1 cup diced carrots (cooked)
(*note* I cooked the lamb in the crock pot with 3 cups water and the raw carrots & seasoning. Also used the broth I had left to make the gravy.
Seasonings that I used were; 2 beef bullion cubes, 2 T. Worcestershire sauce, sea salt (to taste).)
2 cups mashed potatoes (prepared with milk & butter, salt)
1 cup shredded cheddar cheese
paprika to garnish
Combine meat, gravy, veggies, and season to taste.
Mix together the mashed potatoes and cheese.
Line bottom of greased 8x8 pan with 1/2 the mashed potato mixture.
Then top with meat mixture.
Then add the rest of the mashed potato mixture; spread gently over meat.
(if you feel like being really creative, you can pipe the potato mixture onto the meat with a pastry bag.)
Sprinkle the paprika over the potatoes and sprinkle just a little bit of cheese on top.
Bake 400 for 40 minutes.
