Smothered Steak!

Got this recipe out of a Weight Watchers magazine I had picked up one day...
Very good 'comforting' recipe! :)

4 (4 ounce) cubed steaks
1/4 t. salt
1/4 t. pepper
2 t. oil
cooking spray
3/4 cup sliced onions
3/4 cup fat free/low sodium beef broth
3 T. flour (divided)

Salt & pepper the cubed steaks, dust cube steaks with 1 T. flour.
Heat oil in skillet; add steak to pan. Cook 3 minutes on each side or until browned. Remove from pan.

Whisk the remaining 2 T. flour with the beef broth until lumps are gone.
Spray skillet with cooking spray; add the sliced onions and saute until tender.
Stir in broth mixture, scraping to loosen browned bits.
Return steak to skillet. Bring to a boil; cover, reduce heat, and simmer 7 minutes or until gravy thickens and steak is tender. Serve sauce over steaks.

Yields 4 servings. (serving size: 3 oz. meat w/1/4 cup sauce = 291 calories)
